PROBLEM TO BE SOLVED: To provide a low-protein starch food made of a starchy raw material as a main raw material and having a good flavor. or texture. SOLUTION: This low-protein starch food with <=5 mass% of protein content is produced by using a raw material containing the starchy raw material and chitosan and/or a chitosan hydrolyzate. The protein content of the low-protein starch food is preferably <=1.5 mass%. Dietary fibers other than the chitosan and/or the chitosan hydrolyzate are preferably contained in the low-protein starch food. Furthermore, an edible oil and fat is more preferably contained. In addition, amylase or protease, dextrin and a perfume are more preferably contained. |
