PURPOSE: A method for inhibition of brain cell damage using a high molecular weight water-soluble chitosan is provided. In particular, the use of chitosan in a food composition inhibits brain cell damage by ageing or the like and can prevent general ageing symptoms and a brain disease such as Alzheimer's Disease(AD). CONSTITUTION: Brain cell damage is suppressed by using 0.01 to 100% by weight of a water-soluble chitosan having a molecular weight of 10,000 to 1,500,000, wherein the chitosan is deacetylated in its 90% or more and added to a food composition to enhance learning and memory.
