Fish, esp. herring fillets, are marinated in an edible acid-salt soln. of low pH, pref. pH 1-3. Treatment time may be 20-30 secs. after which the fish is pref. packed germ-free and air-tight, opt. with seasoning. A preferred marinating bath contains 27% acetic acid, 4% cirtic acid, 13% salt and 56% water. |
