PROBLEM TO BE SOLVED: To provide a gas quantity controller for a gas roaster which can get a stable quantity of heat by supplying a fixed quantity of gas without a gas burner. SOLUTION: This gas roaster bakes a foodstuff to be cooked, put on a toasting net 2 within a roasting chamber 3, by heating it from above or from above and below with burners 5 and 6. Herein, combustion detection sensors, whose output values change in proportion to the combustion thermal power of the burners 5 and 6, are arranged in the vicinity of the burners 5 and 6. A gas quantity regulating means which regulates the opening of a valve so as to regulate the quantity of gas supplied to the burners 5 and 6, is provided in a gas supply path. This controller feeds back the output of the above combustion detection sensor, and regulates the opening of the valve of the gas quantity regulating means thereby controlling it so that the thermal power of the burners 5 and 6 may be fixed.
