PURPOSE: Provided are a method for extracting a polysaccharide from Acanthopanax in high yield, a polysaccharide extract of Acanthopanax, and a health food comprising the polysaccharide extract of Acanthopanax. CONSTITUTION: The method for extracting a polysaccharide from Acanthopanax by drying and extracting the Acanthopanax, is characterized in that the drying step comprises the substeps of (i) maintaining Acanthopanax at temperature of 25-40 deg.C and relative humidity of 80-100% to dehydrate Acanthopanax, and (ii) decreasing the relative humidity to 5-20% and drying Acanthopanax at temperature of 40-60 deg.C. The method further comprises immersing Acanthopanax into water at 10-22 deg.C for 3-15 hours prior to the drying step.
