PROBLEM TO BE SOLVED: To provide a method for producing a crispy, porous snack food of delicious flavor which has never existed in the world from a tuberous root such as beet and Polynnia sonchifolia containing a large amount of water and having tough fiber. SOLUTION: A tuberous root is cut into a necessary shape or is not cut and pretreated and immersed in a solution of a saccharide having 20-65 Brix degree for a required time. After taking out the tuberous root, it is frozen or is not frozen and fried under reduced pressure and dried. |
