PURPOSE: Provided is a production method of thermostable and acid-stable oligosaccharide by using dextransucrase. The prepared oligosaccharide is useful as a sweetening agent for beverage and foods which require thermostability and acid stability. CONSTITUTION: The production method of thermostable and acid-stable oligosaccharide comprises the steps of: adding dextransucrase, which is derived from Leuconostoc mesenteroides strain, to a solution containing 0.5M-5M of sugar, wherein the solution additionally contains maltose; and reacting them then recovering produced oligosaccharide.
