摘要 PROBLEM TO BE SOLVED: To provide a method for producing pasty roux subjected to heat sterilization, easy to be taken out from a container such as a tube and capable of imparting sufficient postyness to a food when boiling the roux with a specified amount of water. SOLUTION: This method for producing pasty roux in a container, containing starch, water and glucide and further, being allowed to contain common salt is characterized by mixing salt and glucide with an amount satisfying the relations of the glucide ratio (y) and the salt ratio (x) each based on the water content of the pasty roux: y>=1.6x2-14x+50 in the case of x<5, y>=0.1x2-2.5x+30 in the case of 5<=x<=30 and y>=-0.1x2+9.5x-150 in the case of x>30, and also starch and water to prepare the pasty roux and then subjecting the resultant roux to a heat sterilization.
