<p>PROBLEM TO BE SOLVED: To produce a Maccha (powdered green tea)-containing Sake having a flavor of Maccha. SOLUTION: This Maccha-containing Sake is a Sake liqueur comprising a Sake as a base and prepared by mixing the Sake, the Maccha, a Shochu (Japanese distilled spirit), sodium carbonate water and an antioxidant in minimum amount required therefor and is produced by mixing 600-800 ml of the Sake, 1-3 g of the Maccha, 80-120 ml of the Shochu, 100-500 ml of the sodium carbonate water and 0.35 g of the antioxidant based on 1,000 ml of the total amount. The Maccha-containing Sake is produced by initially mixing the Shochu and the Maccha and storing for a prescribed period to produce Shochu in which Maccha essence is extracted and then mixing the Sake containing the antioxidant and the sodium carbonate water stabilizing the flavor of the Maccha thereto.</p> |
