PURPOSE: A process of preparing a water-soluble soybean extract containing an inclusion process of a soybean extract in β-cyclodextrin in the presence of alkaline material is provided. Whereby, the extract can be effectively used in a beverage, simple liquid phase product, cosmetic material and other solubilizing products. CONSTITUTION: The water-soluble soybean extract containing 100 to 1,000 parts by weight of β-cyclodextrin and 1 to 10 parts by weight of alkaline material, based on 100 parts by weight of a soybean extract is prepared by including a soybean extract in β-cyclodextrin at a temperature of 0 to 120deg.C, a pH of 5 to 12 and a speed of 3,000 to 15,000.
