PURPOSE: Provided is an extraction method of beta-amylase from grains by using cellulase. Also, provided is the use of cellulase in the extraction of beta-amylase to increase its yield, and to shorten extraction time. CONSTITUTION: The extraction method of beta-amylase is characterized by extracting grains at 25-33 deg.C, preferably 29-31 deg.C, for 48-66 hours, preferably 55-62 hours, in an aqueous medium in the presence of cellulase, under the reduction condition, to obtain an beta-amylase-containing extract. Wherein, the grains are preferably dehulled barley and wheat.
