PURPOSE: Provided is a storage method of vegetables using ozone gas to maintain their freshness, colors and tastes to give deodorization effect. CONSTITUTION: The storage method of vegetables using ozone gas is characterized by storing vegetables including onions, garlic, ginger and the like at -2 to 40 deg.C and under relative humidity of 50-100% with continuously treating with 0.01-200ppm of ozone gas.
