Vinification machine (10) comprising a tank (11) able to contain must, pressure means (29, 30) arranged inside the tank (11) and able to thrust the solid part of the must downwards and command means (16, 17) able to displace the pressure means (29, 30) vertically; wherein the command means comprise at least a screw element (16, 17) arranged vertically and able to couple with the pressure means (29, 30) and a drive member (16a, 17a, 18, 19) able to make the screw element (16, 17) rotate to achieve the vertical displacement of the pressure means (29, 30).
