PROBLEM TO BE SOLVED: To provide a sterilizer capable of preventing food quality from deterioration even if heat sterilization of the food is made at normal sterilization temperatures and for a short time. SOLUTION: This sterilizer comprises a 1st tank 32 reserving a food such as pickles under heating, a 2nd tank 34 reserving a liquid seasoning under heating, a sealing machine 40 for sealing the upper opening of a vessel V2 packed with the food, a heating control tank 42 reserving hot water with its temperature set at the same level as those of the respective temperatures inside the 1st and the 2nd tanks, a cooling control tank 44 reserving cooling water, and a tending control unit 50; wherein the 1st tank 32 and the 2nd tank 34 are arranged along a conveyor 52, the sealing machine 40 is situated downstream of the conveyor 52, and the conveyor 52 is set up so as to adjoin the sealing machine 40 and extend the conveyance paths into the hot water in the heating control tank 42 and into the cooling water in the cooling control tank 44. |
