PROBLEM TO BE SOLVED: To obtain an allyl sulfone derivative as an important intermediate from which retinol useful for medicine, feed additive and food additive can be easily obtained. SOLUTION: This allyl sulfone derivative is shown by general formula (1) (wherein, Ar is an aryl group that may have a substitute; a wavy line means either of E/Z geometrical isomers, or their mixture) and produced by sulfonating a sulfone derivative shown by general formula (2) (wherein, R is a blocking group for a hydroxy group; Ar and a wavy line are as defined above).
