PURPOSE: A method and apparatus for thawing frozen meat capable of thawing frozen meat within a short time are provided. This method suppresses the deterioration in quality of meat and any difference between the surface and interior in quality. CONSTITUTION: A dressed and frozen meat is closely packaged with a water-absorbing polymer sheet and introduced into a water tank(2) constructed with an electrical insulator(3), and a high-frequency potential is applied to an electrode attached to the water tank by use of water as a medium while agitating water with an agitating device(1).
