PURPOSE: To provide a heating cooker wherein heating is prevented from being insufficient or excess, and heating control with high accuracy, in response to the kind (water content) of an article to be cooked is made. CONSTITUTION: There are provided a heating chamber 2, in which an article 11 to be cooked is contained, a magnetron 5 for irradiating the article 11 with high frequency, and an infrared sensor 10 for detecting the amount of infrared rays emitted from the article 11. The amount of change of the infrared rays within a previously set time interval by the infrared ray sensor 10 is evaluated, and the water content of the article 11 is evaluated on the basis of an evaluation result, and further cooking time of the article 11 is set, on the basis of an evaluation result.
