PROBLEM TO BE SOLVED: To provide a method for keeping quality of an animal protein- containing food material, extending a keeping-quality period to become remark ably longer by treating non-processed or processed products (food material containing animal protein) of fish and shellfish, or meats, using electrolytic water well known as functional water, as a processing liquid. SOLUTION: This method for keeping quality of an animal protein-containing a food material comprises the following steps: treating the food material using electro-generated alkaline water generated through diaphragm-existing electrolysis by using a saline solution as water to be electrolyzed as a processing liquid, and inhibiting corrosion promotion during storage period of time to get long- term quality maintenance.
