The cutting blade of the knife is formed by cutting plates (5) of hard metal, which are set into the peripheral surface of the main blade body (2). The cutting plates engage positively in pocket-like recesses (3), and fixed by soldering with zinc-silver solder. The cutting plates are of special hard metal, with a chromium-nickel compound replacing the cobalt content. The cutting blade is sharpened on both sides.
