PROBLEM TO BE SOLVED: To provide a method for efficiently and inexpensively producing a glyceride highly containing an objective highly unsaturated fatty acid. SOLUTION: This method for producing the glyceride highly containing the objective highly unsaturated fatty acid, containing singly >=40 area% objective highly unsaturated fatty acid comprises using fats and oils constituted of the glyceride containing a triglyceride containing >=80 wt.% fatty acid having a little content of the highly unsaturated fatty acid and high lipase reactivity, i.e., the fatty acid having 6-18 carbons and few double bonds, as a main component, and a fatty acid, an ester or a mixture thereof highly containing the objective highly unsaturated fatty acid, as the other raw material, subjecting the raw materials to etherification or ester interchange to provide ester- interchanged fats and oils having the objective highly unsaturated fatty acid efficiently introduced therein as the first step, and using the ester-interchanged product obtained at the first step as a raw material and selectively hydrolyzing the fatty acid except the introduced highly unsaturated fatty acid by using the lipase to provide the glyceride singly and highly containing the objective highly unsaturated fatty acid.
