PURPOSE: A fermentation apparatus for soy sauce and liquid foods and a fermentation method using the same are provided, therefore the oxygen dissolving rate can be increased and the fermented solution can be easily recovered. CONSTITUTION: The fermentation apparatus for soy sauce and liquid foods comprises a fermenter(10), a raw material storing tank(20), an air supplying device(30), a bubble inhibiting device(40), and a fermented solution recovering tank(50). Particularly, the fermenter(10) comprises a cover(11), a cooling pipe(13) which is positioned at the top of the cover(11) and inhibits the loss of alcohol and volatile compounds, and a multipore plate(14) which is positioned at the bottom of the fermenter(10) and generates micro-sized air bubbles to increase the oxygen dissolving rate into the fermented solution. |
