PURPOSE: A cultivation method of super Cyperus esculentus var sativus by genetically modifying a wild Cyperus esculentus var sativus is provided, therefore the recombinant Cyperus esculentus var sativus can be applied to various foods. CONSTITUTION: The method for selecting the genetically modified, super Cyperus esculentus var sativus is characterized by subjecting the wild Cyperus esculentus var sativus to a complex method of hotbed cultivation method, vinyl house soil improving method, enzyme cultivation method, carbon dioxide method, oxidative gas introducing method, and microorganism solution and ozone water introducing method. The selected Cyperus esculentus var sativus is then cultivated under optimal conditions of water, light, temperature, CO2 concentration, nutrients and humidity to produce super Cyperus esculentus var sativus having a diameter of 15 to 30 mm and a length of 30 to 60 mm, while wild Cyperus esculentus var sativus has a diameter of 3 to 5 mm and a length of 6 to 10 mm.
