A PROCESS OF PREPARING A DERIVATISED SACCHARIDE

A process of preparing a derivatised saccharide comprising at least one modified glucose unit is described. The process comprises using an enzyme to introduce an alkyl group to at least one of the carbons of a glucose unit of a saccaride thereby to form the derivatised saccaride; wherein if the processs is an in vitro process the saccharide comprises more than 5 glucose units and/or modified glucose units, and/or wherein if the process is an in vivo process the enzyme is a recombinant enzyme.
