PROBLEM TO BE SOLVED: To provide a method for producing a highly 5'-nucleotide-containing yeast extract having almost no yeast smell, especially even without using a highly RNA-containing yeast body. SOLUTION: This method for producing a highly 5'-nucleotide-containing yeast extract containing >=10 wt.% of each of 5'-guanylic acid, 5'-adenylic acid or 5'-inosinic acid, 5'-cytidylic acid, and 5'-uridylic acid comprises suspending in water yeast body treated in an acidic aqueous solution (pH 2-5, 30-90 deg.C, 10-60 min) and extracting RNA and the extract component from the resultant product followed by subjecting the resultant extract to 5'- phosphodiesterase and if necessary, deaminase. |
