摘要 PROBLEM TO BE SOLVED: To provide a method for producing a western-style sauce, capable of producing the highly qualified sauce in a short time, even when the western- style sauce is industrially produced through whipped butter (beurre monte). SOLUTION: This method for industrially producing the western-style sauce includes (a) a process where sauce raw materials are charged into a heating vessel, (b) a process where the sauce raw materials are boiled down in the heating vessel into such a state that the sauce raw materials has a water content of A% to (A+15)%, when A% is defined as a water content of the western- style sauce to be finally obtained, and (c) the other process where the boiled- down sauce raw materials are charged with butter in an amount of 10-40 wt.% based on the total amount of the raw materials of the western-style sauce, then heated and emulsified under stirring until the water content of the western- style sauce to be finally obtained reaches a range of 15-40 wt.%.
