PROBLEM TO BE SOLVED: To obtain an antimicrobial protein derived from Japanese horseradish, a gene thereof and a method for utilizing the protein and the gene. SOLUTION: The protein is (a) a protein composed of either one amino acid sequence selected from two kinds of specific amino acid sequences derived from horseradish or (b) a protein composed of an amino acid sequence, in which one or several amino acids are deleted from, substituted for or added to the amino acid sequence and having antimicrobial activity. The gene encodes the above protein. A recombinant vector comprises the above gene. A transformant comprises the above recombinant vector. A transgenic plant comprises the above DNA. A method for producing an antimicrobial protein comprises culturing the above transformant. An antimicrobial agent comprises the above antimicrobial protein as an active ingredient. A functional food comprises the above protein. |
