PURPOSE: A process of preparing the titled boiled rice by swelling soaked rice, unpolished rice or miscellaneous cereals with a heat transfer medium such as salt and then cooking is provided. Whereby, the lightly overcooked rice has a characteristic taste and can be used as convenient snack food. CONSTITUTION: Soaked rice, unpolished rice or miscellaneous cereals are steamed and dried. Thereafter, the dried cereals are swollen with a heat transfer medium such as salt having a size of 2mm or less in a circular roaster at 350deg.C and ground with a roller grinder after water spraying.
