PROBLEM TO BE SOLVED: To provide a method for efficiently extracting an essence from oyster meat, containing a peptide easily binding with minerals such as zinc and manganese. SOLUTION: This method for extracting an essence from oyster meat comprises adding water to the oyster meat, adjusting the mixture to the acidity of <=pH 4 through addition of an acid, extracting an acid-soluble fraction from the oyster meat, and adding an alkali to a solution from which the meat oyster is taken out to neutralize the resultant product and get sediment, wherein there is a peptide at a molecular weight of 6800 based on a chromatography in a sediment and, since the peptide has a large zinc binding capacity, it takes zinc derived from other food in the stomach and helps the zinc to be easily absorbed inside the body. |
