The pump rotates ducts connected to the pump body. Breaking the cap of a marc (1) formed by floating fruit residue includes using a part immersed pump(s) (3) to deliver liquid onto the cap. Each pump has a hollow cylindrical body (6) containing a helix (7) at its immersed lower end and connected by a shaft (9) to a motor (8) at its upper end. The pump rotates ducts connected to the pump body. The ducts direct the pumped liquid directly into the marc to break it up. The pump is mounted in an opening (11) in a vat (2). An Independent claim is included for apparatus for performing the novel method. The pump body is connected to arms (16) attached to a bearing in the opening. Preferred Features: The bearing is located above the level of the marc. The pump has two ducts arranged above each other.
