Breaking the cap of a marc (1) formed by floating fruit residue includes using a part immersed pump(s) (3) to deliver liquid onto the cap. Each pump has a hollow cylindrical body (6) containing a helix (7) at its immersed lower end and connected by a shaft (9) to a motor (8) at its upper end.
