Process (I) for preparing thiosulfinates (II), from synthetic or natural precursors, by placing the precursors at a concentration of at least 1% in water in an autoclave, heating to 100 - 120 deg C, holding at this temperature, and recovering or liberating the gaseous mixture formed. Process (I) for preparing thiosulfinates of formula R-S-SO-R (II) (R is not defined), from synthetic or natural precursors, especially alkyl or alkenyl cysteine sulfoxides prepared synthetically or extracted from plants of the Allium family. The precursors are placed at a concentration of at least 1% in water in an autoclave, and heated to 100 - 120 deg C, held at this temperature for around 10 minutes, and the gaseous mixture formed recovered or liberated. An Independent claim is also included for apparatus for carrying out the process in situ, comprising: (i) a hermetically-sealed container (10), which has four compartments one above the other (11), (12), (13), and (14); (ii) two lower compartments containing materials that react together exothermically, the barrier between them (115a) being removable; (iii) two upper compartments which contain water (130) and a precursor (140) the barrier between these (135a) being removable; and (iv) apertures (15) which are sealed until venting of the gas formed is desired. |
