In working up bran, especially wheat bran, to recover aleurone cells, especially the wheat grain, (a) the aleurone constituents mainly containing aleurone are separated from the non-aleurone constituents mainly containing no aleurone, then (b) the constituents containing aleurone are separated. Independent claims are also included for products and functional foods containing aleurone separated or isolated by this process.
