PURPOSE: Provided are Leuconostoc mesenteroidesB-512FMCM dextransucrase gene, its mutant or their part which can be used for producing dextransucrase, its mutant or a fragment having dextransucrase activity as a part of them by using recombinant microorganisms. Also, provided is a promotor which is used in improving the expression of a structural gene. CONSTITUTION: The protein, its mutant or a fragment having a dextransucrase activity as a part of them, consists of amino acid residues of SEQ ID NO:1. Its coding DNA has a nucleotide sequence of SEQ ID NO:2. The method of producing dextransucrase comprises: transforming a host cell with a vector consisting of 109-4689 nucleotide sequence of SEQ ID NO:2, its mutant or DNA fragment as a part of them; culturing transformants under the condition to express the DNA fragment; then recovering dextransucrase.
