PROBLEM TO BE SOLVED: To provide new and high-grade buns voluminous and hard to collapse despite being very soft overall, having both kinds of filling, i.e., a heat-resistant included filling and a non-heat-resistant packed filling, and having virtually no hard crumb portion with ordinary baked color by utilizing a coating material. SOLUTION: The objective method for producing buns comprises the following steps: (1) forming step A wherein a filling Fa is included in a bread dough K followed by making a forming, (2) placing step B wherein the resultant bread dough K thus formed is placed in a baking formwork 1, (3) proofing step C wherein the bread dough K thus placed is proofed, (4) coating step D wherein a part or the whole of the top surface of the thus proofed bread dough K is coated with a coating material T, (5) baking step E wherein the resultant bread dough K is baked, (6) cooling step L wherein the bread dough K thus baked is cooled, and (7) packing step F wherein another filling Fb is packed in the thus cooled bread dough K.
