Effluent (2) is concentrated in the evaporator (3), separating dry matter and volatiles. The resulting condensate is distilled to extract alcohol. An Independent claim is included for plant carrying out the method, comprising an evaporator and a distillation column (4). Preferred Features: The evaporator (3) has a vapor compressor (5) recovering a fraction of the vapor containing alcohol. This is compressed and re-injected into the evaporator as a vapor heating its heat exchanger tubes. These vapors are monitored for temperature and pressure. Should their values cause reduction of condensation in the evaporator, a fraction of the heating vapors loaded with alcohol is extracted into a zone for removal of incondensibles (6). Effluent is rapidly heated before introduction into the evaporator. The vapor is employed up to the alcohol boiling point, to extract vapors heavily loaded with alcohol. The effluent, then partially-depleted in alcohol, is introduced into the evaporator, for evaporative separation and distillation. Prior to evaporation, effluent is introduced into a fermentation vessel (8) to transform sugars into alcohol. The plant also includes a thermal degassification stage (9) upstream of the evaporator.
