The invention relates to a method for drying fruits and vegetables, to a facility for implementing said method and to an air conveyor dryer for said facility. A facility for drying fruits and vegetables having a pre-drying station, a microwave processing station and a post-processing station is already known. According to the invention, the fruits are distributed in a preferably continuos, evenly high, non-compact layer on the perforated belt of the air conveyor dryer and exposed to a tempered air flow from the bottom in one or several possible drying steps in such a way that the fruits are evenly kept in a suspended or semi-suspended state and predryed to a residual moisture appropriate for puffing in a microwave chamber. The invention can be used in the production of instant fruit products, especially berry products. |
