PURPOSE: A composition for coloring foods is provided, thereby providing meat like substances having a similar color to meat in cooked and uncooked conditions, food products containing a mixture of meat and meat weighting substances and protein-containing substances having a similar color to meat in cooked and uncooked conditions. CONSTITUTION: The composition for coloring foods contains a pigment which effectively provides protein-containing substances with uncooked brown meat like color, has a structure being decomposed by exposure to the temperature efficient to cook the protein-containing substances, and is thermounstable being not efficient to provide protein-containing substances with a substance color; and a browning agent which effectively provides protein-containing substances with a brown color by exposure to the temperature efficient to cook the protein-containing substances, wherein the temperature efficient to cook the protein-containing substances is 50 deg.C or higher; the thermounstable pigment is betaine; and the browning agent is reducing sugar.
