<p>The invention concerns a naturally occuring koji mold wich is incapable of producing a toxin and wich produces at least one compound wich is capable of lowering serum cholesterol concentration for use in a fermented food product. The invention also deals with the use of such mold in the manufacture of a food product. Process for the production of a fermented food product exhibiting cholesterol-lowering properties by inoculating crop material with a mold according to the invention. Food product with cholesterol-lowering properties containing compound stemming from a mold according to the invention.</p> |
