PROBLEM TO BE SOLVED: To obtain a fermented composition containing an extracted and fermented product of a rose, and further to obtain an antiallergic composition and an antioxidant composition containing the fermented composition. SOLUTION: When binding inhibiting rates of a human IgE to an IgE receptor are examined in the case of 0.01% concentration of a sample by using an ELISA method, excellent values such as 66% in a sample 3 containing the extracted and fermented product of the rose, 59% in a sample 5, 75% in a sample 4 containing the extracted and fermented product of the rose and an extracted and fermented product of rice bran and soybean, and 68% in a sample 6 based on 32% in a sample 1 as a hot water extract are exhibited. In the case of 0.001% concentration of the sample, excellent values such as 15% in the sample 3, 22% in the sample 4, 18% in the sample 5 and 25% in the sample 6 based on 0% in the sample 1 are exhibited. As a result, it can be understood that the samples 3 to 6 containing the extracted and fermented product of the rose have activities for inhibiting the binding activities of the human IgE to the IgE receptor at concentrations lower than that of the sample 1 only containing the extract of not fermented rose and the extracted and fermented product of the rose is excellent in antiallergic activities. |
