The cryogenic tunnel (1) carries foods (2) on conveyor (4), and has internal deflectors (6) to limit gas flow. Deflectors are formed from three linked vanes (7,8,9) fitted to the roof of the tunnel, forming a parallelogram, with one vane (8) parallel to the conveyor. An actuator (12) mounted in the roof of the tunnel adjusts deflector clearance above the conveyor to height of the food.
