PROBLEM TO BE SOLVED: To provide a material for a meat-processed food capable of enabling the meat-processed food such as a baked meatball, a hamburg steak or the like having glaze with luster on the surface in the same degree as the one cooked by applying a sauce on the surface, and having imparted preferable sweet tasting to be made by only frying the material by a frying pan or the like. SOLUTION: This material for the meat-processed food comprising meats as a main raw material is characterized in that a glucide in an amount regulated so that the content thereof in the total raw material of the meat-processed food may be >=5 wt.% is added to the raw materials of the material for the meat-processed food, and an anhydrous crystalline glucose is used as the whole or a part of the glucide. |
