PURPOSE: Provide is a method for producing crude enzyme including various crude enzymes having high activities and hydrolyzing grains and especially glucoamylase having acid resistance as a main enzyme. Therefore they are used for the production of grain spirits. CONSTITUTION: The method for producing crude enzymes including alpha-amylase, protease, lipase, cellulase and glucoamylase which is a main enzyme comprises the steps of: seed-culturing Aspergillus usamii in a broth containing 10% of wheat bran having a size of 20 mesh adjusted to pH 2.5 to 3.0; inoculating the culture into the wheat bran containing 0.25 to 0.30% of hydrochloric acid concentration; inserting the mixed wheat bran into a vessel; and solid-fermenting, drying and crushing the fermented wheat bran.
