PURPOSE: A method for processing a vegetable salad is provided by conducting sanitary washing and post-treatment processes using washing water which is harmless to the human body to distribute a vegetable salad to a consumer in a flesh state. Whereby, the salad can be maintained fresh for a long period of time and a customer can stably eat the salad without cooking. CONSTITUTION: The vegetable salad is produced in a series of steps comprising (1) a first washing process for washing the cut vegetable with clean water several times, (2) a second washing process for washing the washed vegetable after soaking in a washing water dissolving a chlorine-based disinfectant in clean water at 18deg.C, (3) a third washing process for washing the washed vegetable, (4) a precooling process for precooling the washed vegetable after soaking in water at 0 to 5deg.C, (5) a fourth washing process for washing the precooled vegetable after soaking in acidic ionic water of pH 2.5. |
