PROBLEM TO BE SOLVED: To provide an exhaust/ventilating technique capable of locally completing ventilation without deteriorating living property and workability. SOLUTION: In a kitchen room where a cooling apparatus 1 that could cause contaminated air is existent, there is provided a method for locally exhausting air in the vicinity of the surroundings of the cooking apparatus 1, in which an upward sucked air stream 16 is caused continuously from an upper position of the cooking apparatus 1 to the outside of the room and further an upward blow-off air stream 21 is produced from a side position near the cooking apparatus 1, whereby contaminated air 30 existent in the vicinity of the circumference of the cooking apparatus 1 is forcedly collected and delivered to the blow-off air stream 21 with the aid of an induction action of the blow-off air stream 21.
