Production of porous bakery products comprises using a raising agent including a hydrophilic cellulose derivative (I). An Independent claim is also included for a process for producing (I)-containing ammonium carbonate, bicarbonate or carbamate, comprising reacting ammonia and carbon dioxide in a (I)-containing aqueous solution and separating and drying the product.
