PROBLEM TO BE SOLVED: To provide a method for producing a protein hydrolysate that has a low antigenicity and osmotic pressure, and can be used for a food allergy patient who often has a coincidence of diarrhea. SOLUTION: This method comprises the steps of hydrolyzing a raw protein with an endoprotease so that the degradation ratio can be 20-30%, fractionating the obtained protein hydrolysate using a membrane having a pore size of 1 nm to 5 μm, and carrying out the second hydrolysis of the permeated fraction with a protease containing an exoprotease so as to increase the degradation ratio by 2-8% and to give the final degradation ratio of 25-35%. |
