PROBLEM TO BE SOLVED: To obtain an α-galactosidase gene of a new gene, cloned from a chromosomal DNA of the 8084 strain, capable of providing a gene recombinant obtained by using Escherichia coli as a host, and capable of enabling an expression enzyme to be efficiently produced because the gene recombinant obtained by using the Escherichia coli as the host can express a heat-resistant α- galactosidase in high activities compared to the 8084 strain, and capable of enabling raffinose to be mass-synthesized and produced by utilizing the expression enzyme because the enzyme can synthesize the raffinose from sucrose and galactose. SOLUTION: This gene is the new α-galactosidase gene having heat resistance. |
