Slaughtered poultry (2) which is positioned with legs spread apart and with upright abdominal cavity (23), is transported in a direction (9) opposing to flow direction of cooling water (27), such that water flows round and through the poultry from the abdominal cavity towards the neck cavity (24). Independent claims are also included for the following: (1) installation for cooling slaughtered poultry, which comprises a positioning unit for receiving the slaughtered poultry with the abdominal cavity oriented upwards in the transporting direction, a transportation unit (3) for transporting the positioned poultry and a cooling unit containing a cooling container (6) for cooled and flowing water, which flows in a direction opposing the transportation flow; and (2) cooled slaughtered poultry.
