PROBLEM TO BE SOLVED: To provide a fryer 1 that can minimize oxidation of oil and easily produce a high-quality product. SOLUTION: This fryer 1 comprises an oil tank 2 for storing oil and an electric heater 30 for heating the oil in the oil tank 2. When a fry basket 4 containing dressed foodstuffs is immersed in the oil stored in the oil tank 2 and heated by the electric heater 30, the foodstuffs are fried up. The fry basket 4 has a cover 9 for covering the top opening thereof. The cover 9 consists of a metal material and is detachably mountable on the fry basket 4.
