PREPARATION METHOD OF FUNCTIONAL JERKED FISH INCLUDING EXTRACT OF GREEN TEA

PURPOSE: Provided is a preparation method of functional jerked fish including extract of green tea ingredient to prevent adult diseases and be used as a snack for a patient needing diet-control. CONSTITUTION: A preparation method of functional jerked fish is composed of the following steps of: (a) pre-treating fish; (b) obtaining extract of green tea wherein the incense peculiar to green tea is maintained and tannin and bitter taste is eliminated; (c) marinating the pre-treated fish in dressing made from extract of green tea, oligosaccharide, sorbitol, salt, succinic acid and sodium L-glutamate; and (d) drying it under sunlight or cold windy.
