The pressure generating and retaining system for food mincing machines has a single screw(2) mounted in a pressure casing(1), and in the center region of the pressure casing and screw the single screw has reinforced screw threads(3) in the form of widened screw thread heads(4). With rotation of the screw the screw chambers(7) formed between the threads are circumferentially sealed in relation to the inner wall of the pressure casing and grooves(5) filled with foodstuff. The grooves are provided circumferentially in the pressure casing in unbroken sequence.
